Behind the Shuck: The Realities of Oyster Farming
Like us, oysters thrive in the right environment, and when the weather turns or disease spreads, we just hope that the mortality rate of our oysters isn't too high. 2021 was particularly tough, as heavy floods in March, followed by sustained rainfall, wreaked havoc on the river. The floods disrupted the river's salt concentration, affecting the oysters' ability to feed and resulting in a huge loss for us.
A decline in oyster population doesn't just affect our business; it has far-reaching consequences for the entire Hawkesbury River ecosystem. Oysters play a vital role as natural filters, not only ensuring clarity in the water but also helping maintain nutrient balance within the river.
